Sweet potato soup

- 1 large sweet potato peeled and diced
- 1 large onion diced
- 3 cloves garlic minced
- 4 cups chicken or vegetable broth
- 1 tsp. dried thyme
- 1/2 tsp. paprika
- 1/2 tsp. cumin
- Salt and pepper to taste
- 1 cup heavy cream
- Optional toppings: chopped chives croutons, grated cheese
- Set the Ninja Foodi to sauté mode and add diced onion and minced garlic. Cook until softened, about 3-5 minutes.
- Add diced sweet potato, broth, thyme, paprika, cumin, salt and pepper to the pot.
- Pressure cook on high for 10 minutes, then quick release the pressure.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree in batches.
- Stir in heavy cream and heat through on sauté mode.
- Serve hot, with your preferred toppings. Enjoy!
