  • 2 pounds of stew beef
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 large onion chopped
  • 2 garlic cloves minced
  • 2 cups beef broth
  • 2 cups of water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 4 large carrots peeled and chopped
  • 4 large potatoes peeled and chopped
  • 1 cup frozen peas

Instructions
 

  • Start by preparing your ingredients. Cut the stew beef into bite-sized pieces and season with salt and pepper. Place the flour in a shallow bowl and coat the beef pieces in the flour.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef pieces and brown them on all sides, working in batches if necessary. Once browned, remove the beef pieces from the pot and set aside.
  • Add the chopped onion and minced garlic to the pot and sauté until the onion is soft and translucent.
  • Add the beef broth, water, bay leaves, and thyme to the pot. Stir to combine and bring the mixture to a boil.
  • Once boiling, add the browned beef pieces back into the pot. Reduce the heat to low and let the stew simmer for about an hour, or until the beef is tender.
  • Add the chopped carrots and potatoes to the pot and stir to combine. Simmer the stew for an additional 30 minutes, or until the vegetables are tender.
  • Add the frozen peas to the pot and stir to combine. Let the stew simmer for an additional 5-10 minutes, or until the peas are heated through.
  • Serve your old-fashioned beef stew hot, with a crusty bread or over a bed of mashed potatoes.
