Parmesan polenta fries

To accompany meats, fish or vegetable patties, we share with you the recipe of polenta fries with parmesan, a crispy delicacy. Flavoured just right, these oven-baked golden polenta sticks will work wonders with young and old alike.

Ingredients
  

  • 250 g polenta
  • 33 cl of milk
  • 33 cl of water
  • 60 g butter
  • 125 g grated Parmesan cheese
  • Fresh thyme
  • 10 cl of olive oil
  • Salt

Instructions
 

  • In a saucepan, pour the water and milk and simmer over low heat. Pour the polenta in rain without ceasing to mix with a whisk.
  • Remove from the heat and stir in the olive oil, butter, parmesan, thyme and salt. Stir until thickened.
  • Oil a baking tray and pour the polenta into the bottom of the tray. Leave to cool and refrigerate for 2 hours.
  • Turn out the polenta out of the mould, cut into fries and roast in the oven for 25 to 30 minutes, turning them regularly.
  • Serve the polenta fries with a little fresh thyme and parmesan cheese.
