Couscous express

A typically Berber speciality, couscous is a tasty and fragrant dish made with semolina, vegetables, spices and meat or fish. Slowly simmered, it is a real delight in the mouth! Here is an express recipe to simply make this dish from the Maghreb.

Ingredients
  

  • 2 carrots
  • 2 turnips
  • 1 zucchini
  • 1 onion
  • 1 pinch ground cumin
  • 1 pinch of harissa
  • 1 pinch of turmeric
  • 2 pinches of coriander
  • 3 tablespoons ras el hanout
  • 1 liter of water
  • 300 g of semolina
  • 4 chicken thighs
  • 2 fillets of olive oil

Instructions
 

  • Peel the vegetables then cut the onion and turnips into pieces. Slice the carrots and zucchini into chunks.
  • In a casserole, sauté the onion for 3 minutes with a drizzle of olive oil. Add the spices and mix with a wooden spoon. Place the vegetables and simmer with 1 liter of water over a low heat.
  • In the meantime, fry the chicken in a frying pan with a drizzle of olive oil. Once golden, transfer it to the stewpot and continue cooking. Season with a pinch of salt and pepper.
  • When the vegetables and meat are cooked through, serve them with the previously cooked semolina (follow the instructions on the packet).
